Abstract

The concetration of power in global food systems by trasnational corporations has generated profound transformations in the dynamics of food production and consumption worlwide. However, at the local level, particulary in rural and indigenous communities, women`s work in preserving food production and preparation has been essential for maintaining traditional food cultures. The present article, through an exhaustive literature review, offers a theoretical reflection on how food empires have permeated current culinary production and consumption practices. Despite this, traditional indigenous practices have resisted these onslaughts, fighting against these empires and maintaining a traditional, local, and ancestral food culture.
